We loved shawarma. We loved fried chicken. We could never work out why we had to choose.
The question
What happens when India's spice heritage meets the world's favourite comfort food?
Purists might say we broke the rules. We would say we evolved them. We wanted the shatter-crisp bite of golden fried chicken inside a pillow-soft rumali, and nobody was making it — so we did.
The crunch
Fried fresh for every order. Traditional shawarma is beautiful, but we wanted a texture that fights back.
